alhaji's cuisine:: Egusi Stew




3 bunch of spinach leaves

Assorted meat

Palm oil (I do Olive Oil)

Salt or maggi

Fresh tomatoes

Habanero

Onion

Ground crayfish

Stockfish

Red bell pepper

Egusi

............................

Clean and prep' your spinach

Clean and prep' your meats in a large pot

Blend together Onions and peppers and Tomato (in a blender)

Heat up your palm oil and add your Onions and peppers and Tomato blend

Cook for 50 mins

Add beef stock cook for another 5 min

Add your meats

Add seasoning

Cook for 5-10 mins

Add your spinach

Add Egusi

Adjust seasoning and simmer for 10-15 mins (low heat)


Plate and eat as desired
