alhaji's Cuisine::HOT Curry Festive..











Recipe for 1 whole chicken.......

Chicken
Curry powder
Onions
Garlic
Olive Oil
Tomato
Salt
Black pepper
Serrano pepper (hot green pepper)
Flour
Thyme
Basil
Oregano


Clean/prep chicken
Season chicken with salt
Dust chicken with flour and brown in a pot/skillet (don't cook, the flour dust is going to be your thickening agent)
Add cut/diced onions, garlic, tomato, pepper , thyme, oregano, basil and curry powder and let sweat for 2mins.
Add 4 cups of water or chicken stock.
Adjust seasoning and simmer for 30 mins or till done..........



Serve and enjoy with Chardonnay.............
