Summer Seafood Blast




Mussels

Scallops

Clams

Shrimp

Cucumber

Corn

Green peas

Squash

Radish

Fresh Tomato

Red Onion

Mint

Olive Oil Vinegar

Salt

Black Pepper

Lemon

Basil

Olive oil




Boil or steam clams, mussels, and shrimp separately

Toss cucumber, onion, tomato, corn, peas, squash and peppers in Olive oil (do not cook, just toss for 1-2 mins)

Combine seafood and vegies

Add 4 tps olive oil

Add 3 tbs lemon juice

Add cut or sliced mint (4-6)

Add salt and black pepper

Toss around in salad bowl


Adjust seasoning and serve...........




Enjoy with a good glass of Pino grigio or carbonet sauvignon ...
