Sweet potato pancake With Stewed Fruits, Poached Egg And Fried Catfish Nuggets.




1/2 a pound Baked or boiled sweet potato
1/2 cup milk
1 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon ground nutmeg
2 eggs, beaten
1 cup of milk
1/4 cup melted butter
pieces of pecan nuts
1/2 teaspoon nutmeg (optional)


In a medium bowl, mix together baked or boiled sweet potato, flour, baking powder, salt, eggs and nutmeg.

Add melted eggs, milk and melted butter

Preheat a lightly greased griddle over low to medium heat.

Scoop batter mixture onto the griddle by heaping tablespoonfuls, just before flipping over [when the surface begins to bubble]drop fruits or nuts on top of the raw batter and flip over with a spatula.

Cook until golden brown.

Enjoy with stewed fruits and quality maple syrup.
