Nigerian pancakes with eggs and fruits.
1 cup of flour
2-3 small or medium size eggs
1/2 cup evaporated milk
1/2 Teaspoon salt
1/4 Teaspoon Nutmeg and or Allspice
1/4 cup sugar
1/2 Teaspoon Chili pepper (Optional)
1 cup of water
Mix eggs, sugar and milk together in a mixing bowl
Add and mix in flour
Add and mix in water cup of water, chili pepper, nutmeg and or allspice
Mix ingredients thoroughly with no visible lumps
Add flour to thicken or water to thin mixture
In a heated skillet with little vegetable oil, gently pour batter into the skillet or frying pan.
Tilt the pan around to evenly coat the surface of the skillet or frying pan
Cook for 1-2 minutes and flip over to cook on the other side after using a spatula to loosen the edges and check for brownness.
Remove pancake when done.
