Ingredients-
1 cleaned and split fish head
1 tbs curry powder
1/2 cup coconut milk
1 tsp chopped garlic
1tbs chopped onion
1/2 tsp lemon grass
Diced green and red bell pepper
1 tbs olive oil
1 tsp crushed chili pepper
1/4 fish stock or water
Salt and pepper to taste
Method-
Add olive oil to a heated skillet
Saute onions, garlic, peppers and lemon grass
Add curry powder
Add coconut milk
Let cook at low heat for 5 minutes
Add fish head
Adjust seasoning and sauce
Let cook for 10 minutes at low to medium heat
Let rest for 5 minutes before serving
