Nkwobi.

I love tradition and authenticity, but not when it comes to Nkwobi, this is definitely not your regular Nkwobi recipe.  The key here is the enhanced flavor base with local ingredients and flavor with a little notch from non traditional ingredients.

Ingredients-

Little pieces of boiled and tender cow leg (No bones)
4 tbs palm oil
2 tbs chopped onion
Slices of red onion
1 tsp Ehuru
2 tsp ground potash
Pieces of dried fish
Pieces of dried shrimp
1 tsp chipotle powder
1 tsp Italian seasoning (Rosemary, Oregano, Thyme and Basil)
1 tsp onion powder
1 tsp garlic powder
1/2 cup water
Salt to taste
Maggi (Optional)

Heat oil in a pot @ medium heat and lightly fry chopped onion
Add dried fish, dried shrimp, chipotle powder, onion powder, garlic powder, Italian seasoning, ehuru, potash and pieces of cow leg
Stir and water.
Add salt and or Maggi.
Stir and let simmer cook for 10 minutes
Remove from heat and serve.
