Spinach Stew With Baked Mackerel..





Spinach Stew With Baked Mackerel..
Ingredients-
2 lbs cleaned and blanched spinach 
2 cups tomato sauce
1/2 cup chopped onion
1/2 cup diced tomato
2 tsp chopped garlic
1 tsp Italian seasoning
1 tsp smoked paprika
2 tsp crushed red pepper
1/4 cup Olive or Palm oil
Salt to taste
Maggi (Optional)
Mackerel (Cut)
Method-
Heat oil in a pot @ medium heat.
Add chopped onion and dice tomato and cook for 2 minutes
Add tomato sauce and cook for 4-5 minutes
Add Mackerel, seasonings and spices and let cook for 5 minutes
Remove Mackerel from sauce and set aside
Add and toss spinach in the sauce
Transfer tomato sauce and spinach into a baking pan or dish
Gently place Mackerel on spinach and bake in a heated oven @ 350 degrees for 20 minutes..
Remove from oven and serve.
