In Nigeria, empanadas are commonly referred to as "meat pies". They
are usually stuffed with seasoned beef or chicken.

Stuffing Ingredients-

Serves 4-6

1lb diced or ground choice of beef or chicken
1/2 cup of diced red, green and yellow bell peppers
1/2 tbs salt
1/2 tbs black pepper
1 tbs onion powder
1/4 chopped onion
1 tbs chopped garlic
1/2 tbs crushed chili pepper
1/2 tbs Italian seasoning
2 tbs Olive oil

Combine ingredients in a skillet or frying pan and cook at medium heat
for 5-8 minutes and set aside when done.

Dough ingredients and method-

3cups flour
1tsp salt
1tsp sugar
4 egg yolks
3 tbs butter
3/4 cup water

Stir in salt and sugar in a mixing bowl
Add and blend in butter
Add and whisk in egg yolks
Add water and kneed the dough
Gently kneed the dough till a smooth and soft texture is achieved.
Cover and refrigerate for 30-45 minutes

Roll out dough on a floured surface with rolling pin
Cut out dough to desired preferred thickness
Slightly wet the edge of the dough, fold in two and stick edges together.
Pinch the edges together with your finger or small fork
Glaze the empanadas with egg white
Set empanadas in a flour dusted baking pan or line the baking pan with
parchment paper
Bake in a 345 degrees preheated oven for 20-30 minutes.

Serve and enjoy warm.

Hi Sisi Blu. Thanks for stopping by, I just posted a pic of the filling. It's basically like our meat pie, the only difference here is the filling, you get to put whatever you want in there.

The one I made was filled with chopped smoked beef, chopped spicy beef with spices and peppers.

I just made meat pies last night. I use an all butter pie crust, but next time I will try your crust and see the difference. Thanks.
