Classic Rice And Stew.

3 lb cuts of oxtail (cleaned and seasoned)
½ cup slice onions
¼ cup diced tomato
1 tablespoon chopped green onion
2 teaspoon chopped garlic
½ chopped habanero pepper
½ paprika
½ teaspoon nutmeg
½ teaspoon all spice
1 teaspoon Italian seasoning
1 teaspoon onion powder
1 teaspoon chipotle powder
Salt to taste
4 tablespoon olive oil


Heat up olive oil in a pot
Add and brown oxtail for 8-10 minutes at low heat
Add and stir onion, tomato, garlic, green onion and chopped habanero for 2-3
Add beef stock or water
Add chipotle powder, onion powder, Italian seasoning,, all spice,
nutmeg, paprika
Cover and let simmer for 1 hour or till done (Adjust seasoning as needed)
Add and cook with beans if desired.

Enjoy with peas and rice, fried plantain, and fried or boiled dumplings.
