Jerk chicken

Jerk Marinade Sauce-

2 tablespoon brown sugar
1/4 cup Soy sauce
2 tablespoon chopped green onions
1 chopped scotch bonnet pepper
1 tablespoon Ground allspice
1 tablespoon chopped ginger or ginger powder
1 tablespoon Italian seasoning
1 tablespoon cayenne pepper
1 teaspoon clove
1 teaspoon ground black pepper
1 teaspoon nutmeg
1 teaspoon cinnamon
1 tablespoon chopped garlic
4 tablespoon olive oil
1 tablespoon lime juice
1 tablespoon garlic powder
Salt or garlic salt to taste
1cup of chicken stock or water

Combine ingredients and blend thoroughly in a blender

Seasoning chicken-

Season chicken with jerk marinade sauce
Cover and refrigerate overnight


Heat up and set your grill to medium heat
Grill chicken for ten minutes on each side or until fully cooked
(Baste chicken with marinade as needed)

Serve with beans and rice, fried plantain and dumplings.
