Baked plantains and eggs with sun dried tomato and peppers.
1 whole ripe plantain (Fried ) 6 medium size beaten and salted eggs 6 pieces of sun dried tomato 1 jalapeno pepper 1 tablespoon olive oil Salt to taste
Pour beaten eggs into a baking dish or loaf pan and place fried whole plantain, jalapeno and sun dried tomato in the middle. Place in a heated oven and bake for 10-12 minutes at 355 degrees. Remove and let rest for 5 minutes Gently remove baked egg and plantain from baking container Slice and serve warm.
