Stewed chicken in tomato, mushroom and cheese sauce.

Stewed chicken in tomato, mushroom and cheese sauce.

Serves 4-6

Cut up whole chicken
2 cups dice tomato
1 cup tomato sauce
1/2 cup diced onion
2 Teaspoon chopped
1/2 cup sliced mushroom
1 Teaspoon black pepper
1 Teaspoon onion powder
1 Teaspoon Italian seasoning
1 cup chicken stock
Salt to taste
1 tablespoon chopped parsley
4-6 Tablespoon Olive Oil
1/2 Cup Pecorino cheese


Slightly brown chicken in a oiled skillet
Add dice onions, chopped garlic and let cook for 1-2 minutes at low to medium heat
Add chicken stock
Add diced tomato, tomato sauce and sliced mushroom
Season with onion powder, Italian seasoning, black pepper and salt
Let simmer for 25-30 minutes
Add Pecorino cheese and simmer for 5 minutes
Remove from stove top and let rest for 10 minutes before serving
Enjoy with your favorite pasta or rice.
