Curry Pot with chicken, shrimp and potatoes..

2 lb Chicken legs or breast (Skinned and cut)
1-2 lb Shrimp
1 lb Potatoes (peeled)
2-3 tbs Hot Madras curry
1 can coconut milk
1/2 cup onions (Diced)
1/2 cup fresh tomato (Diced)
1 tbs garlic (chopped)
1 tbs onion powder
1/2 tsp black pepper
4 tbs olive oil
Chicken stock
Green onions
Salt and black to taste

Saute or gently cook onions, garlic, tomato in a skillet or pot for 1 minute
Add and stir in coconut milk, curry powder and onion powder
Add chicken and potatoes
Add chicken stock, salt and black pepper
Let simmer 20 - 25 minutes
Add shrimp and green onions
Adjust seasoning
Let simmer for 5 - 10 minutes or till done
Let rest 10 minutes before serving

Enjoy with jasmine or any white rice
