Fiesta Play. Herb grilled cat fish with rice and cinnamon butter

Grilled cat fish fillet

4-6 pieces of Cat fish fillet (Cleaned)
2 tablespoon hopped red bell pepper
2 tablespoon chopped green bell pepper
1 tablespoon red chili flakes
1 tablespoon chopped garlic
2 tablespoon olive oil
Salt and black pepper to taste
Heavy duty aluminum foil


Cut out generous portion of aluminum foil
Lightly grease the aluminum foil with olive oil and set aside
Combine chopped bell peppers with chopped garlic and chili flakes
Gently spread combined peppers, garlic and chili flakes on all fish fillet
season with salt and black pepper
Add a few drops of olive oil on fish fillet
Gently place all fish fillet on greased aluminum foil
Place in a heated oven and let cook @ 360 degrees oven for 5-8 minutes
Remove and let rest for 5 minutes when done



1 cup parboiled rice
2 1/2 water
1 teaspoon water
salt to taste


Combine in a pot and bring to a boil
Cover and simmer cook for 20-25 minutes
Fluff with fork and serve

Cinnamon butter glazed fried plantain


2 ripped plantains
1 tablespoon cinnamon powder
1 tablespoon sugar
2 1/2 tablespoon unsalted butter
Salt to taste


Peel and season plantain with salt
Fry whole in a deep fryer
Remove and let rest for 2-3 minutes
Brush plantain with butter, cinnamon and sugar
place in the oven and let grill for 4-5 minutes
Remove and let cool before serving
