Curry Shrimp.


1lb extra large shrimp (uncooked)
3 tbs olive oil
1 tbs chopped onion
1 tsp chopped garlic
1/2 tsp minced fresh ginger
1 tbs curry powder
1 cup unsweetened coconut milk
1 tbs chopped fresh cilantro or parsley
1 tsp peanut butter
1 tbs dried raisins


Heat oil in a skillet @ medium heat
Add chopped onion, garlic minced ginger, curry powder and saute for 3-4 minutes
Add coconut milk an let cook for 2-3 minutes
Add shrimp and cook and cook for 2 minutes
Add peanut butter and raisins
Add salt and black pepper
Add cilantro or parsley

Serve with Basmanti or any white rice.
