Egusi with bitter leaf.


Your choice of Beef, chicken or turkey (Prepped)

1/2 cup Egusi

Diced tomato

Dice onion Onion

Onion powder

Chipotle powder


Black pepper

Chopped garlic

Diced red bell pepper

Habanero or Scotch bonnet

Bitter leaf Soaked and drained)

Olive Oil

Palm Oil

Maggi (Optional)


1 cup water


Fry tomato, onion, garlic and peppers in mixture of Olive and or Palm oil for 2-3 minutes

Add tomato sauce and paste or blended peppers, habanero, onions and tomato.

Add your meat

Add onion and chipotle powder, salt, black pepper and or Maggi

Add 1 cup water or stock

Add soaked and drained bitter leaf

Add egusi

Adjust seasoning

Simmer cook for 10 - 15 minutes

Gently stair to break up egusi lumps

Let cook for 5 more minutes and remove from stove.
