Fried Rice With Baked Chicken and Fried Plantain.


Nigerian fried rice


2 lbs parboiled rice
1/2 cup chopped onion
2 tsp chopped garlic
1/2 cup mix of diced carrot, corn kernel and snow peas
1tsp Italian seasoning
Salt and black peppper to taste
3-4 tbs olive oil
1tbs butter
3 cups of stock or water
Add maggi or knoor if desired.


At low or medium heat, heat up butter and olive oil
Add chopped onion and garlic and fry for 1 minute
Add rice and keep frying for 4-5 minutes
Gently add stock or water, vegetable mix and seasonings
Bring to a boil
Cover and place in a heated oven and let cook @ 350 degrees or till done
Let rest for 5-10 minutes before serving

Note: Adjust seasoning and add water ass needed.

Baked chicken


Clean and dressed 4 Chicken leg quarters of whole chicken
Mixture of salt, black pepper and fajita seasoning
1/2 cup sliced onion
Olive Oil for basting


Heat oven @ 350 degrees
Season chicken with seasonins and place in a backing dish of pan
Place in a heated oven and let cook for 45 minutes or till brown and done
Bast with olive oil as needed


Fried Plantain


1 ripe plantain (sliced or diced)
Salt to tast
Frying oil


Season plantain with salt and fry in a heated frying oil till golden brown
Let drain and serve warm.
