Ojojo/Yam Fritters
Ingredients-
1 lb water yam
1 tablespoon chopped onion
1 tablespoon chopped green onion
1 tablespoon chopped red chili pepper flakes
Salt to taste
Frying oil @ 375 degrees.
Method-
Combine ingredients and mix together in a bowl
Check and adjust seasoning as needed
Scoop mixture into frying oil with a tablespoon.Try not to crowd the oil.
Fry till golden brown
Remove and drain
Serve hot or warm.

Ikokore.



Ingredients

1 lb Water Yam (Peeled and grated)..
1/2 peeled shrimp  and or choice of meat and seafood.
1/2 whole onion, 1 fresh tomato, 2 tatashe pepper or 1 habanero pepper, 1 cup water (Blended)
1 cup water
3 tbsp palm oil
1 Maggi
Salt to taste

Description
Heat up palm oil in a pot and add 1 cup water, blended pepper, tomato and onion mixture
Add choice of meat and or seafood
Add salt and or Maggi
Bring to a quick boil and reduce heat to simmer
Gently school into the sauce grated water yam with a spoon
Cover and slow cook till water  yam lumps are soft and tender or just taste test.

Let rest for 5 minutes before serving.

Note: I used fresh shrimp.

Efo riro




Efo riro. 

This Efo riro is all about deep flavor with non traditional seasonings and spices.

Ingredients-

Measure according to servings

4 bunches of fresh spinach or soko

2 lbs cuts of turkey wings (Boiled and lightly fried)

2-3 pieces dried fish (Deboned)

Pieces of dried shrimp

1 cup boiled and broken down pieces of stock fish

1 cup or can tomato sauce

1/2 cup diced tomato

1/2 cup chopped onion

2 teaspoon onion powder

1 teaspoon chipotle powder

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

1 teaspoon crushed red pepper or chopped habanero pepper

2 teaspoon chopped garlic

2 tablespoon Olive Oil

2 tablespoon palm oil

1 teaspoon Italian seasoning

Salt to taste

1 teaspoon black pepper

Method-

Saute onion, tomato and garlic in olive oil and palm oil

Add tomato sauce and let simmer for 3-5 minutes

Add turkey, stock fish, dried fish and dried shrimp.

Add spinach or your choice of leafy greens

Add seasonings

Stir and disperse liquid as needed till done.

Simmer and cook down till there's little or no liquid left.

Remove from heat and let rest for 10-15 minutes

Serve with your choice of fufu

Note: feel free to blend your tomatoes, pepper and hot peppers like habanero, ata rodo and others.

Don't add water or parboil your vegetable, there's more than natural water in the vegetable to cook with..




Stewed Oxtails With Peas And Rice...
Ingredients-
2 lbs oxtails
1 cup tomato sauce
1/2 cup diced or sliced tomato
1/2 cup chopped or sliced onion
1/2 diced celery
2 tsp chopped garlic
1 tbs onion powder
1 chopped habanero pepper
1 tsp Italian seasoning
2 cup water
4 tbs olive or vegetable oil
Salt and or Maggi to taste...
Description-
Combine ingredients in a oven proof pot and cook in a heated oven for 1 hour 30 minutes @ 350 degrees.
Serve with peas and rice..

2 tbs chopped onion
2 tbs chopped tomato
2 tsp chopped garlic
1 tsp italian seasoning
2 tsp turmeric powder
1 tsp achiote powder
1 tsp paprika
1/2 cup olive oil
1 tbs butter
Salt and pepper to taste
3 cups water
Maggi (Optional)
Methode-
Combine ingredients in a pot or rice cooker and cook till done.
Grilled Chicken-
2 lbs cut up chicken leg quarters
Season chicken with salt and black pepper
Grill in a heated oven @ 350 degrees for 30 minutes or till done..

Curry Chicken.




Curry Chicken.
Ingredients-
2 lbs skinless chicken
2 tbs curry powder
1 tsp turmeric
2 tbs chopped onion
1 tbs chopped green onion
Sliced whole tomato
1/2 cup diced celery
1 inch stalk lemon grass.
1/2 onion powder
1/2 garlic powder
1/2 tbs Italian seasoning
1/2 tsp ginger powder
1 cup coconut milk
1 cup water
3 tbs olive oil
Salt and black pepper to taste
Description-
Combine ingredients in a pot or skillet, cover and cook at low heat for 45 mins - 1 hour.
This was done in a rice cooker with slow cook function

Southwestern Fiesta Rice And Chicken.



Ingredients-
2 lbs parboiled rice
1 lb chicken breast/Cooked and shredded
1/2 cup corn
1/2 black beans
1 whole tomato/Sliced
2 tbs chopped onion
2 tsp chopped garlic
1 tsp paprika
1 tsp cayenne pepper
1 tbs butter
Sliced Jalapeno
Maggi or Chicken base
3-4 cups water or stock..
Description-
Combine ingredients in a pot and cook for 30-45 minutes or till done.
Or cover and bake in a heated oven and bake for 20 - 30 minutes or till done.
Let rest for 5-10 minutes before serving..









Guajillo chile chicken.
8-10 pieces of dried Guajillo peppers. Remove seeds.
3-4 lbs dressed chicken leg quarters
2 peeled garlic cloves
2 tbs chopped onion
1 tsp mexican oregano
1 tsp smoked paprika
1 tsp cayenne pepper
1 tsp onion powder
1/2 tsp cumin
Cajun seasoning
4 cup water
2 tbs olive oil
2 tbs flour
Salt
Season chicken with salt and cajun seasoning and bake in a heated oven @350 degrees for 20 minutes. Done or not, remove and set aside.
Blend guajillo pepper, onion and garlic cloves in a blender.
Bring blended pepper to a boil in a pot
Add mixture of flour and 2 cups water
Add olive oil, salt and seasonings
Quickly transfer into baking pan or dish
Gently add baked chicken
Cover and bake in a heated oven 20-30 minutes
Remove cover and let bake for 10 minutes
Remove and let rest for 5 minutes before serving..

Roast Beef with Potatoes And Gravy..
Ingredients-
2 lbs chuck roast
1 lb cut potatoes
2 tbs chopped onion
2 tsp chopped garlic
1/2 cup diced red bell pepper
1/2 tsp cardamom spice (Optional)
1 Italian seasoning
2 tbs roux base
2 cups water or stock
Salt and black pepper to taste
Description-
Season beef with salt and black pepper
Sear beef on both sides in a heated skillet or pot.
Combine ingredients in pot or slow cooker
Adjust seasoning if necessary
Cover and cook @ low heat for 2 hours or till tender.
Note:: This was done in a rice cooker using slow cook function.

Nkwobi.

I love tradition and authenticity, but not when it comes to Nkwobi, this is definitely not your regular Nkwobi recipe.  The key here is the enhanced flavor base with local ingredients and flavor with a little notch from non traditional ingredients.

Ingredients-

Little pieces of boiled and tender cow leg (No bones)
4 tbs palm oil
2 tbs chopped onion
Slices of red onion
1 tsp Ehuru
2 tsp ground potash
Pieces of dried fish
Pieces of dried shrimp
1 tsp chipotle powder
1 tsp Italian seasoning (Rosemary, Oregano, Thyme and Basil)
1 tsp onion powder
1 tsp garlic powder
1/2 cup water
Salt to taste
Maggi (Optional)

Heat oil in a pot @ medium heat and lightly fry chopped onion
Add dried fish, dried shrimp, chipotle powder, onion powder, garlic powder, Italian seasoning, ehuru, potash and pieces of cow leg
Stir and water.
Add salt and or Maggi.
Stir and let simmer cook for 10 minutes
Remove from heat and serve.

Chili Cornbread Casserole..




Ingredients-

1 lb. ground chicken
1/2 cup chopped onion 
1 tbs chopped green onion
2-3 tbsp chili powder
1/4 diced green bell pepper
Salt and black pepper to taste
1/2 cup diced fresh tomato
1 cup cooked kidney beans (I mixed with Northern beans)
1/2 cup tomato sauce
3 tbs Olive oil
1 1/2 cups of water or stock

Cooking Chili-

Heat up a skillet or port and add olive oil.
Gently fry onion, green onion, tomatoes and green bell pepper for 2 minutes at medium heat.
Add tomato sauce.
Add chili powder and mix gently.
Mix in ground chicken or beef and stir cook for 2 minutes
Add water or stock and salt and pepper
Let cook for 5 minutes at medium heat
Remove and gently pure chili into a oven proof baking casserole 


Corn bread batter-

1 cups corn bread mix
1 egg
2 tbs vegetable oil
1/2 cup milk

Mix together and pure cornbread batter evenly over chili
Bake in a heated over at 350 for 20 minutes or till top is golden brown.

Remove and let rest for 5 minutes before serving..

BBQ Chicken Salad..

BBQ Chicken
Pecan nuts
Diced Avocado
Pickled pepper
Mixed Salad leaves
Dried cherries
Dried cranberries
Almond nuts
Pine nuts
Green and black olives

BBQ Chicken recipe..
1/2 lb cut chicken breast
Salt and black pepper
BBQ Sauce
3 tbs Olive oil

Season chicken with salt and black pepper
Gently baste chicken with olive and back in a heated oven at 375 degrees for 5 minutes.
Remove chicken from the oven and baste with BBQ sauce
Return chicken to the oven and cook for another 5 minutes
For deeper flavor, baste again and cook for 3-5 minutes.

Method -
Plate and serve as desired.

Onion Mushroom Sandwich.


Ingredients-

Onion Mushroom Sandwich.
1 cup sliced portobello Mushrooms.
Sliced 1 average side Onion 
1 cup sliced gouda cheese 
Sliced whole wheat bread
2 tbs olive oil..

Method-
Heat up 1 tbs olive oil in a skillet at medium heat
Grill wheat bread on each side for 30 seconds then remove and set aside..
Heat up 1 tbs olive oil in a skillet at medium heat
Add sliced onion and mushroom
Cook for 3-4 minutes
Remove from heat and set aside
Lay 1 slice of cheese on grilled bread and scoop onions and mushroom on each slice of bread.
Add another slice of cheese, place another grilled bread on top
Repeat ass needed depending on desired portions.
Place sandwich on a baking pan or oven proof plate and place in a heated oven for 1-2 minutes to melt cheese.
Remove and serve right away..
