I love tradition and authenticity, but not when it comes to Nkwobi, this is definitely not your regular Nkwobi recipe.  The key here is the enhanced flavor base with local ingredients and flavor with a little notch from non traditional ingredients.


Little pieces of boiled and tender cow leg (No bones)
4 tbs palm oil
2 tbs chopped onion
Slices of red onion
1 tsp Ehuru
2 tsp ground potash
Pieces of dried fish
Pieces of dried shrimp
1 tsp chipotle powder
1 tsp Italian seasoning (Rosemary, Oregano, Thyme and Basil)
1 tsp onion powder
1 tsp garlic powder
1/2 cup water
Salt to taste
Maggi (Optional)

Heat oil in a pot @ medium heat and lightly fry chopped onion
Add dried fish, dried shrimp, chipotle powder, onion powder, garlic powder, Italian seasoning, ehuru, potash and pieces of cow leg
Stir and water.
Add salt and or Maggi.
Stir and let simmer cook for 10 minutes
Remove from heat and serve.

Chili Cornbread Casserole..


1 lb. ground chicken
1/2 cup chopped onion 
1 tbs chopped green onion
2-3 tbsp chili powder
1/4 diced green bell pepper
Salt and black pepper to taste
1/2 cup diced fresh tomato
1 cup cooked kidney beans (I mixed with Northern beans)
1/2 cup tomato sauce
3 tbs Olive oil
1 1/2 cups of water or stock

Cooking Chili-

Heat up a skillet or port and add olive oil.
Gently fry onion, green onion, tomatoes and green bell pepper for 2 minutes at medium heat.
Add tomato sauce.
Add chili powder and mix gently.
Mix in ground chicken or beef and stir cook for 2 minutes
Add water or stock and salt and pepper
Let cook for 5 minutes at medium heat
Remove and gently pure chili into a oven proof baking casserole 

Corn bread batter-

1 cups corn bread mix
1 egg
2 tbs vegetable oil
1/2 cup milk

Mix together and pure cornbread batter evenly over chili
Bake in a heated over at 350 for 20 minutes or till top is golden brown.

Remove and let rest for 5 minutes before serving..

BBQ Chicken Salad..

BBQ Chicken Salad..

BBQ Chicken
Pecan nuts
Diced Avocado
Pickled pepper
Mixed Salad leaves
Dried cherries
Dried cranberries
Almond nuts
Pine nuts
Green and black olives

BBQ Chicken recipe..
1/2 lb cut chicken breast
Salt and black pepper
BBQ Sauce
3 tbs Olive oil

Season chicken with salt and black pepper
Gently baste chicken with olive and back in a heated oven at 375 degrees for 5 minutes.
Remove chicken from the oven and baste with BBQ sauce
Return chicken to the oven and cook for another 5 minutes
For deeper flavor, baste again and cook for 3-5 minutes.

Method -
Plate and serve as desired.

Onion Mushroom Sandwich.


Onion Mushroom Sandwich.
1 cup sliced portobello Mushrooms.
Sliced 1 average side Onion 
1 cup sliced gouda cheese 
Sliced whole wheat bread
2 tbs olive oil..

Heat up 1 tbs olive oil in a skillet at medium heat
Grill wheat bread on each side for 30 seconds then remove and set aside..
Heat up 1 tbs olive oil in a skillet at medium heat
Add sliced onion and mushroom
Cook for 3-4 minutes
Remove from heat and set aside
Lay 1 slice of cheese on grilled bread and scoop onions and mushroom on each slice of bread.
Add another slice of cheese, place another grilled bread on top
Repeat ass needed depending on desired portions.
Place sandwich on a baking pan or oven proof plate and place in a heated oven for 1-2 minutes to melt cheese.
Remove and serve right away..

Grilled Tilapia With Shrimp And Potatoes..

Apple Watermelon Salad..


prep and measure ingredients as desired..
Purple lettuce
Pine nuts
Lemon vinaigrette dressing

Combine Ingredients in a  mixing bowl and serve.

Avocado Strawberry Salsa..


1/2 cut diced avocado
1/4 cut diced mango
1/4 cup diced strawberry
2 tsp chopped cilantro
1 tsp lime juice
Salt to taste..


Combine ingredients in a mixing bowl and serve with chips or any dish..

Baked Chicken Leg Quarters...

3 Pieces prepped chicken leg quarters
1 fresh tomato (Sliced)
1 cup cut green beans
2 tsp coarse black pepper
1 tbs fajita seasoning
1. tsp salt
3 tbs olive oil

Heat oven @ 365 degrees
Season chicken salt and fajita seasoning and place in a baking pan or dish
Add sliced tomato and green beans
Sprinkle Olive oil on chicken
Drizzle olive oil and chicken
Cover and place in a heated oven
Bake for 45 minutes
Remove cover and turn off heat
Let chicken stay in the over for 10 minutes
Remove chicken and let rest for 5 minutes before serving..

Shrimp And Veggie Taco..

Pesto chicken wings..
1 lbs dressed chicken wings
Fajita Seasoning
1/2 cup Pesto sauce with 2 tsp smoked Paprika. Mixed
Cracked or coarse black pepper..
Place chicken in baking pan or dish and cook @ 380 degrees for 20-25 minutes.
Remove and baste wings with mixture of pesto and smoked paprika
Place in the oven and bake for 5 minutes
For deeper flavor, baste and cook for 5 minutes.
Remove and let rest for 5-10 minutes before serving...
Quinoa And Bulgur With Shrimp...
1 ib Deveined shrimp
¼ tsp coarse black pepper
1 tbs Louisianan seafood sauce
Salt to taste
Combine and mix all ingredients in a mixing bowl
Grill shrimp in a heated skillet at medium heat (Don’t over caramelize)
Remove and set aside..
Quinoa And Bulgur With Shrimp.
1 Ib mixture of White and Red Quinoa and Bulgur.
1/4 tsp Italian Seasoning
1 tbs chopped Onion (Optional)
½ tsp chopped Garlic (Optional)
1/4 tsp Oregano
2 tbs Olive Oil
2 cups stock or water
Salt and black pepper to taste
Heat up a pot or skillet @ medium heat
Add Oilve Oil and lightly fry chopped onion and garlic for 1-2 minutes
Add water or stock
Add Italian seasoning and Oregano
Add salt and black pepper to taste
Cook for 20 minutes
Remove from heat and set aside
Cut green beans-
Season green beans with regular salt and 1 tsp Louisiana seafood sauce
Cook in skillet at low heat for 5 minutes or till slightly tender..
Plate and add pieces of dice Avocado..
Baked Beans And Oxtails..
2 lbs Cut Oxtails
1 Fresh tomato (Dice or sliced) 
1 lbs northern beans
Cut green beans
2 tbs chopped onion
1 tbs chopped green onion
1 tsp chopped garlic
½ cup tomato sauce
½ tsp Italian seasoning
½ smoked paprika
½ black pepper
Salt to taste
4 cups water ot stock
3 tbs olive oil.
Combine all ingredients in a baking pan, dish or pot
Cover and bake in a heated oven @375 degrees for 1 ½ hours or till done..
Remove from oven and let rest for 5-10 minutes before serving..
Efo Riro....
1 cup tomato sauce
2-3 bunch of spinach or choice of leafy greens. (Cleaned and prepped)
2 lbs fried turkey wings (Feel free to substitute)
2 tbs chopped onions
3 tbs diced or sliced tomato
1 tsp chopped garlic
1 tsp chopped habanero
1 tsp Italian seasoning
1 tsp Mexican Oregano
1 tsp smoked paprika
2 tbs Olive Oil
2 tbs Palm Oil
Salt and to taste
2 Maggi cubes (Optional)
Feel free to adjust or improvise as desired..
Heat olive oil and palm oil in a skillet or pot @ medium heat
Add and gently fry chopped ingredients in a pot or skillet
Add tomato sauce, spices, seasonings and cook for 2 minutes
Add fried turkey and leafy greens
Turn up heat and stair around till there’s little or no lose sauce..
To preserve color, texture and nutrients, don't pre boil your greens..
To avoid over cooking while trying to get rid of excess liquid, just don't add any liquid because your greens is full of water.

Chicken Vegetable Soup.

Chicken Vegetable Soup...

 Ingredients- Bone in chicken leg quarters (Boneless Ok)

Squash. 1/4 bunch Kale.
1 cup Green beans
1/2 cup cut Carrots
3 tbs diced fresh tomato
 1 cup diced Potatoes Portobello mushroom
3 tbs chopped onions 1/2 tsp dried Basil
1/2 tsp dried oregano
1/2 dried rosemary.
3 tbs Olive Oil 4 cups water or chicken stock
Kosher salt and black pepper to taste
Chicken Bouillon (Optional)

Combine Ingredients in a pot Bring to a quick boil and quickly reduce heat and simmer cook for 25-30 minutes..

Let rest for 5-10 minutes before serving.
