Mac and cheese with fried fish, shrimp and Iced tea.

Beaf Stew with acorn squash.




Ingredients-

1 pound beef
2 stalk stalks of celery/cut. Season with salt and black pepper
1 teaspoon chopped parsley
1 teaspoon chopped rosemary
2 table spoon chopped onion
1 table spoon chopped garlic
1/4 round cut carrots
1 table spoon all porpose flour
1 bay leaf
2 cups of beef broth
2 table spoon olive oil
1/2 cup red wine
1 cup of cube cut acorn squash
Salt and black pepper to taste.

Description-

Heat olive oil in a skillet at medium heat
Add and brown beef till a light crust is formed
Add chopped onion, garlic, carrot, parsley and let cook for 1 minute
Add flour, stir gently and cook for 1-2 minutes
Add wine and beef stock
Add the rest of the ingredients
Adjust seasoning, cover and cook in a heated oven for 45 mins- 1 hour
Remove and let rest for 10 minutes before serving.

Watermelon Feta With Mint Salad



Ingredients-

Cuts of sweet watermelon
Feta cheese
Mint leaves

Description-

Set cut watermelon in a serving bowl
Sprinkle feta crumbs on water and garnish with mint leaves
Serve cold

Trader Joe's announces opening date of Woodlands store. Thank Youuuuuuuuu.

Trader Joe's has announced it will open its Woodlands store on Friday, June 15 at 8 a.m. The 13,500-square-foot store is currently under construction in The Woodlands Crossing Shopping Center at the southeast corner of Woodlands Parkway and Kuykendahl Road.

The Woodlands store is the first of two Trader Joe's stores opening in Texas. The other location is in Forth Worth and opening the same day.

Trader Joe's is dubbed as a “unique, neighborhood grocery store with foods and beverages from the exotic to the basic,” according to a release. The store carries an extensive array of domestic and imported foods and beverages, including fresh-baked artisan breads, Arabica bean coffees, international frozen entrees, juices, fresh crop nuts, deli items and basics such as milk and eggs.

The store also offers its private label brand which includes Trader Jose's salsas, Trader Ming's fried rice, Trader Giotto's marinara sauces and specially purchased items.

Frying oil


Season cut plantain with Kosher salt and fry in a heated oil at 375 degrees


Chili sauce

Ingredients-

1/2 tablespoon crushed chili pepper
1 tablespoon chopped pepper
1/2 cup tomato sauce
12/ cayenne pepper
1/2 paprika
1tbs olive oil
Salt to taste

Description-

Combine ingredients and cook at low heat in a skillets for 3-5 minutes

I love plantain, I love it fried, I love it boiled, grilled, steam and I even eat it raw. I sometimes love to make plantain cake which is my favorite way to enjoy plantain and here the recipe.
Plantain Cake Recipe


Ingredients:


1 or 2 over ripe plantains
1 cup of all purpose flour
1 teaspoon Baking powder
½ cup Sugar, I prefer to use brown sugar
2 eggs
Pinch of salt
1/3 cup vegetable oil
Butter


Method:


In bowl, beat the eggs and add the sugar. Then add flour, baking powder, salt and mix well.
In another bowl mash the plantains, do not mash until completely smooth.
Pour the mashed plantains in the egg and flour mixture and mix all together. Then add in the vegetable oil and stir well.
Grease you baking dish or loaf pan with butter and pour the batter in it.
Bake in the oven for 35 minutes to 350 degree F.
Let it cool down before serving. Enjoy!!!!

Grilled beef and shrimp curry.

Ingredients-

lbs sliced beef
2 tbs curry powder
1 cup coconut milk
1 cup stock or water
1/2 cayenne pepper
1/2 tsp ginger powder
1 tsp chopped garlic
1/4 cup sliced onions
1 tbs chopped green onions
2 tbs Olive or vegetable oil.
Salt and black pepper to taste.

Optional ingredients:

1 tbs peanut butter1 tbs raisins

.

Directions-
Heat up oil in a skillet at medium heat.
Add sliced onions, chopped garlic and let cook for 1-2 minutes
Add curry powder, ginger powder, cayenne pepper, coconut milk and let cook for 2-3 minutes
Gently add shrimp and beef
Add stock or water and let simmer cook for 8-10 minutes
Remove from heat and let rest for 5 minutes before serving.

Add optional ingredients to add depth and extra flavor if desired

Good life pizza






Ingredients-

Pizza dough
grilled shrimp
Sliced grilled beef
Olives
Sliced red onions
Sliced red pepper
Corn kernels
Feta cheese
Mozzarella cheese

Optional ingredient:
Pizza sauce or marinara sauce

Directions-

Roll out pizza dough on a dry flour dusted surface
Place ingredients on pizza dough as desired (Minus cheese)
Sprinkle cheese on pizza and bake in a heated oven and bake @ 350 degrees till done
Let rest before serving.

Jollof with moin moin, dodo and stewed beef.

Spicy Cajun Crabs And Peppers.



Ingredients-


2 lbs crabs
1 cup mixture of diced red and green pepper, garlic, onion and celery
2 tbs Cajun seasoning
1 tbs cayenne pepper
1/2 Italian seasoning
1 tbs butter
1 tbs olive oil
Salt and black pepper
1/2 cup water

Directions-

Combine ingredients (Minus Crabs)in a pot or skillet and heat to a boil
Quickly remove and add crabs
Toss crab crab in the spicy sauce and make sure crabs are well coated with sauce.
Cover and let rest for 5-10 minutes before serving.

Shrimp in butter herb sauce.



Ingredients-

1 lbs deveined shrimp
2 tbs butter
1/2 chopped garlic
1 tsp chopped basil
1/2 tsp Italian seasoning
Salt and black pepper to taste

Directions-

@ very low heat, melt butter in a skillet
Quickly add all ingredients
Adjust seasoning
Let cook for 5 minutes
Remove from heat and serve warm.

Baked Japanese Red Yam




Ingredients-

1 Japanese yam
Salt to taste
Chopped green onions
Butter

Directions-

Place Yam on a baking tray and bake till soft tender to the touch
Remove when done and let rest for 5 minutes before cutting open
Serve with butter and chopped green onions.

Ingredients-

Quantity according to preference and servings

Spinach or your choice of leafy vegetable
Dried fish
Dried shrimp
Fresh shrimp
Stock fish
1 Fresh tomato
1 red bell pepper
1 Onion
1 tsp chopped garlic
Habanero pepper
Half cup palm oil or Olive oil or a mixture of both
Salt to taste

Feel free to add any other ingredients like beef, turkey, tripe and or cow feet.

Blend tomato, onion, garlic, red bell pepper in a blender with a cup of water.

Method-

Heat up Oil on a pot at medium heat
Add blended ingredients and let cook 5-10 minutes
Add the rest of the ingredients except spinach and let cook for 5 minutes
Add salt to taste (Add Maggi if desired)
Add spinach and gently toss everything together
Adjust seasoning
Let cook 10-15 minutes at low heat
Let rest for 5-10 minutes before serving.


Note::

Feel free to add other flavor enhancers like 1 tsp Italian seasoning, 1 tsp chipotle powder to add depth.

Use very little liquid to reduce cooking time

Stir gently to disperse liquid

Baked Spicy Red Tilapia

Ingredients-

1 Fresh Red fish (Cleaned)
Sweet peppers (Feel free to substitute with Bell peppers)
Onions
Cajun seasoning (Feel free to use seasoning salt or spice of choice)
Salt and black pepper as needed
Olive oil
Lime wedges

Method-

Season fish with spices, salt and black pepper
Place fish in a baking dish or pan
Add onions and peppers
Drizzle olive oil on fish and place in a hated oven
Bake for 15-20 minutes
Remove and let rest for 5 minutes before serving
Garnish with lemon wedges.
