Oleku Rice.












Ingredients-
2 cups parboiled rice
1lb fresh shrimp, peeled and deveined
1 cup mixture of dried fish and crayfish
2 tablespoon chopped onion
1 fresh tomato, sliced
2 teaspoon chopped garlic
1 chopped habanero pepper or 2 teaspoon crushed chili pepper
1 cup mixture of green peas and diced carrots
Basil leaves
1 teaspoon Italian seasoning
1 teaspoon paprika
1 teaspoon onion powder
2 tablespoon olive oil
2 tablespoon palm oil
Salt to taste
3 cups water or stock, add more water or stock as needed
Maggi or Knor, optional

Method-
Heat olive and palm oil in a skillet and fry onion and garlic at medium heat
Add the rest of the ingredients, except fresh shrimp, carrots and green peas
Cook for 15 and add shrimp, diced carrots and green peas
Cover and cook for 6-20 minutes or till done.

The Ultimate Comfort Soup
Ingredients-
Feel free to add or subtract ingredients as needed.
1-2lb lightly shredded cooked chicken, skinless
1 average size plantain, sliced
2 cup mixture of cut carrots, green peas and corn kernel
2 tablespoon chopped onion
1 tablespoon chopped green onion
1 tablespoon chopped parsley
2 teaspoon chopped garlic
1/2 cup diced celery
2 tablespoon olive oil
1 table spoon butter
1 teaspoon dried oregano
1/2 teaspoon black pepper
2 tablespoon flour
3 cups whole milk
1 cup stock or water
1/2 cup Parmesan cheese
1/2 cup cheddar cheese
2 tablespoon creme cheese
Salt to taste
Method-
Heat olive oil and butter in a pot at medium heat
Add and slightly cook flour, onion, garlic, green onion and celery for 2-3 minutes
Add the rest of the ingredients and simmer cook for 15 to 20 minutes or till done
Remove from heat and serve hot..

Chicken Dumplings









Chopping Board Recipies> Chicken Dumplings.
Ingredients-
Serves 4
2 Ib boiled dark and white skinned chicken meat.( Save stock)
2 tbs chopped onion
1/2 cup diced celery
1/2 cup diced carrots
2 tbs diced red bell pepper
1 tbs butter
3 tbs olive oil
1 cup whole milk
1 tsp Italian seasoning
Salt and black pepper
2 tsp garlic powder
2 tsp onion powder
2 tbs flour
3-4 cups chicken stock or water
Dumplings-
2 all purpose cup flour
2 tbs butter
1 cup milk
1/2 tsp salt
Combine and mix ingredients in a mixing bowl to form a dough
Set aside.
Method-
Heat up butter and olive oil in a skillet
Add chopped onion, celery, carrot, diced red bell pepper, flour and cook at low heat for 4-5 minutes
Add chicken stock or water and stir to loosen up flour.
Add salt, Italian seasoning, garlic powder and onion powder
Bring to a quick boil
Add chicken and spoon in dumplings (Teaspoon or tablespoon depending on dumpling size) at a time
Stir in milk and cook at low heat for 15 - 20 minutes or till done.

Creamy Chicken Spaghetti.




Cheesy Chicken Spaghetti.
Ingredients-
2 lb chicken breast, cut and cooked
1 lb spaghetti, boiled al dente
1 tablespoon chopped onion
2 tablespoon butter
3 tablespoon olive oil
2 tablespoon flour
1 cup whole milk
2 cups chicken broth
1/2 cup dry white wine
1 teaspoon Italian seasoning
2 tablespoon diced red bell pepper
1 cup mixture grated Parmesan, Asiago and Romano cheese, store bought Kraft mix is fine
Salt and black pepper to taste
Method-
Heat olive oil and butter in a skillet at low heat
Add and cook red bell pepper and chopped onion for 2 minutes
Add flour and cook for 2-3 minutes
Add wine, chicken broth, Italian seasoning, salt and black pepper
Cook to a bubble and gently mix in milk, cheese
Let cook for 2-3 minutes and add spaghetti
Let cook 3-4 minutes at low heat, remove from heat and serve..

Taco Soup




Chopping Board Recipes> Taco Soup
Serves 4
Ingredients-
1 lb ground beef. Cooked
1/2 cup corn kernel
1 cup cooked black beans
1 cup cooked garbanzo beans
1 cup cooked red kidney beans
1 cup pinto beans
1 cup diced tomato
1 cup hominy
2 tbs chopped onion
1/2 chopped garlic
1/2 chopped serrano pepper
3 tbs olive oil
1 tsp dried mexican oregano
1 envelope Taco seasoning
1 envelope ranch salad mix
2 cup water
Method-
Combine ingredients in a skillet or pot
Bring to a boil and quickly reduce heat to simmer
Let simmer cook for 15 minutes
Remove from heat and serve.

Chicken And Great Northern Bean Soup..




Chopping Board Recipes> Baked Chicken With Great Northern Beans.
Ingredients-
3-4 Ib cuts of chicken, skinless
2 cans of cooked great northern beans
3 cups of water or chicken stock
1 medium size onion, chopped
1 tablespoon diced red bell pepper
1 tablespoon diced green bell pepper
2 fresh tomatoes, sliced
2 cloves of garlic, chopped
1 teaspoon Italian seasoning
3 tablespoon olive oil
1 tablespoon butter
Salt to taste.
Fried plantains, optional
Heat oven 350 Degrees.
Method-
Heat olive oil in a skillet and add chopped onion, peppers and garlic for 3-4 minutes.
Add stock or water, seasonings, butter, beans and chicken
Taste and adjust seasoning
Cover and bake in a heated oven for 25 minutes or till done
Remove cover and let cook for 10 minutes.
Remove from oven and serve.
With fried plantains, optional..

Baked Cornflakes Chicken tenders.




Baked Cornflakes Chicken tenders.

Ingredients-

1 lb cut skinless chicken breast
1 Cup cornflakes crumbs in a large bow.
(Drop 2 cups of cornflakes in a freezer bag, lock and crush with rolling pin)
4 Eggs (Beaten)
2 tbs chopped parsley
Salt and black pepper to taste

Method-

Pre-heat oven @ 400 degrees.
Spray baking sheet or rub down with olive oil
Combine and mix together cornflakes and parsley
Season chicken with salt and black pepper
Gently coat each piece of chicken with beaten egg
Coat chicken in the cornflakes and parsley mixture
Shake off excess coating
Gently place each piece on baking sheet
Piece in heated oven and bake for 14 minutes (Flip over after 1st 7 minutes)
Remove from oven
Season with salt if necessary and serve.

Orange Chicken





Orange Chicken.
Ingredients-
Chicken breast (Deboned)
3 cups fresh orange juice
2 tablespoon chopped onion
2 teaspoon chopped garlic
1 tablespoon chopped red bell pepper
1 tablespoon chopped parsley
1 tablespoon chopped onion
2 tablespoon butter
1 tbs olive oil
3 tablespoon sugar
2 teaspoon Italian seasoning
Sliced or diced mushrooms
Salt and black pepper to taste
Method-
Turn on oven @ 350 degrees.
Heat butter and olive oil in a skillet or pot at medium heat
Add chopped onion, chopped green onion and chopped garlic and cook for 2 minutes
Add orange juice, sugar and bring to a quick boil
Reduce heat place gently drop in chicken
Add the rest of the ingredients
Taste and adjust seasoning if necessary
Cover and bake in a heated oven @ 350 degrees for 20 minutes
Remove cover and let cook for 10 more minutes (Baste every 5 minutes)
Remove from oven and serve..

Scotch eggs.






Scotch eggs..
Ingredients-
4 large boiled and peeled eggs
1 beaten egg in a bowl
1 lb sausage meat
2 tsp chopped parsley
1 tbs chopped onion
1 tbs chopped onion
1 tsp Italian seasoning
1 cup breadcrumb
Salt to taste
Frying oil
Method-
Heat oil in a deep fryer 300 Degrees..
Mix together ingredients except boiled eggs, beaten eggs and breadcrumb
Scoop sausage and hand form a flat patty
Wrap formed patty around each egg and make sure to evenly cover egg
Roll wrapped egg in breadcrumb
Remove and roll in beaten egg
Return to breadcrumb and roll again
Gently drop each egg in deep fryer and let fry for 4 minutes
Remove and bake in a heated oven for 3-4 minutes @ 350 degrees.
Remove from oven and serve..

Spinach Stew With Baked Mackerel..
Ingredients-
2 lbs cleaned and blanched spinach 
2 cups tomato sauce
1/2 cup chopped onion
1/2 cup diced tomato
2 tsp chopped garlic
1 tsp Italian seasoning
1 tsp smoked paprika
2 tsp crushed red pepper
1/4 cup Olive or Palm oil
Salt to taste
Maggi (Optional)
Mackerel (Cut)
Method-
Heat oil in a pot @ medium heat.
Add chopped onion and dice tomato and cook for 2 minutes
Add tomato sauce and cook for 4-5 minutes
Add Mackerel, seasonings and spices and let cook for 5 minutes
Remove Mackerel from sauce and set aside
Add and toss spinach in the sauce
Transfer tomato sauce and spinach into a baking pan or dish
Gently place Mackerel on spinach and bake in a heated oven @ 350 degrees for 20 minutes..
Remove from oven and serve.

Rice Cooker Quick Fix Jollof Rice

Ingredients-

2 lb parboil rice
2 cans or 2 cups tomato sauce
3 tbs chopped onion
3 tbs diced fresh tomato
2 tbs tomato paste
1 tsp chopped garlic
1 tsp pepper flakes
1 tsp ginger powder
1 tsp onion powder
1 tsp Italian seasoning (Thyme, Oregano, Marjoram, Basil)
4 tbs olive oil
4 cups water
2 MAGGI (Optional)
Salt to taste

Method

Turn on rice cooker and add olive oil
Add diced tomato, chopped onion, tomato sauce and tomato paste
Cover and let cook for 5 minutes
Add the rest of the ingredients
Adjust seasoning, salt and water if necessary
Cover and let cook for till done.

Feel free to bake in a heated oven if desired..

Pillsbury Grands Yummies...

















Pillsbury Grands Yummies...
Ingredients-
Measure according to preference.
Pillsbury grands
4 Mexican cheese
Mozzarella cheese
Diced potatoes (Boiled or grilled)
Diced beef or chicken (Boiled or grilled)
Chopped onion
Chopped celery
Chopped red bell pepper
Italian seasoning
Salt
Black pepper
1 tbs butter or olive oil
2 cup flour (For working surface and rolling)
Method-
Combine and quickly saute chopped onion, celery, red bell pepper, diced potato and diced beef for 4-5 minutes at low heat
Remove from heat and set aside
Dust working surface with flour and roll out each piece of Pillsbury dough with a rolling pin
Add fillings by starting cheese and ending with more cheese
Place another rolled out dough on top of the fillings
Cut out excess dough and gently transfer onto a flour dusted baking sheet
Bake in a heated oven for 10 to 15 minutes @ 350 degrees.
Feel free to substitute fillings with fruits filings as desired
