Egusi Stew



Beef, boiled and fried.

Fresh Shrimp 

Dried shrimp


Half n half palm oil and olive oil

Blended tomato, Onion, Garlic and Peppers

1/2 teaspoon Italian seasoning

1 tablespoon onion powder

1 teaspoon smoked paprika

Beef stock from boiled beef and or Maggi cubes

Spinach or your choice of leafy greens

Salt to taste


Heat up your oil at medium heat

Add blended tomato, Onion, Garlic and Peppers and let cook for 3-5 minutes

Add beef, fresh and dried shrimp, stockfish and beef stock

Add seasonings

Let cook at medium heat for 5 mins

Add leafy vegetable of your choice

Add Egusi, do not stir, just cover and let the egusi steam on top your vegetable.

(This is how you get natural lumpy Egusi effect)

Stair gently to break up the steamed Egusi

Adjust seasoning and liquid as needed and simmer cook till done.
