Guiso de ternera con plátano (Plantain and Beef Stew)

Beef Stew


3-4 servings

1 pound beef, trimmed and cut
2-pound unripe , cut
2 tablespoon chopped garlic
1 cup mixture of diced red and green bell pepper, chopped onion and green onion
1 cup diced carrots.
1 teaspoon ginger powder
1/2 teaspoon thyme
3 pieces bay leaf
1 teaspoon Italian seasoning
2 teaspoon smoked paprika
1 teaspoon cumin
1/2 cup flour
3 cups beef stock
4 tablespoon vegetable oil
Salt and black pepper to taste.


Heat up oven at 335 degrees
Season beef with salt
Slightly dust or coat beef with flour
Heat up oil in a pot and add flour-coated beef
Slightly brown beef on all sides, do not overcook
Add broth to loosen up beef bits and crusted flour
Bring to a quick boil and lower heat
Add the rest of the ingredients
Adjust seasoning and cover
Place in the heated oven and let cook for 1 hour or till meat is tender
Remove from oven and let rest for 5-10 minutes before serving.
